Recipe from Food’s Greatest Hits Season 1, Episode 5: Sugar Rush

You’ve never seen a cupcake like this! Mini pancakes stacked high on top of vanilla buttercream and a pancake cupcake.

Cupcake Ingredients
Serves 6-12

  • 2 cups flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tsp baking powder
  • 1½ cup milk
  • 2 eggs
  • 2 tbsp butter, melted


Vanilla Buttercream Ingredients

  • ⅓ cup butter, softened
  • 1½ tsp vanilla extract
  • 3 cups icing sugar
  • 1 to 2 tbsp milk


Mini Pancakes Ingredients

  • 1 cup flour
  • 1½ cup self-rising flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar
  • 2 eggs
  • 160ml buttermilk
  • 2 tbsp vegetable oil


To Serve

  • 2 tbsp vanilla icing
  • Yellow food coloring
  • Maple Syrup


Cupcake Method

  • Preheat oven to 175°C. Line a muffin tin with cupcake liners.
  • Whisk the flour, sugar, salt, and baking powder.
  • In a separate bowl mix together milk and eggs. Stir in the melted butter.
  • Slowly add the wet ingredients to the dry, whisking as you go.
  • Spoon equal amounts into the muffin tin and bake for 15-20 minutes. Use a toothpick to poke cupcake, if it comes out clean its ready. Set cupcakes aside to cool.


Vanilla Buttercream Method

  • Beat the butter in a mixer until soft and add vanilla extract.
  • On a slower speed add half of the icing sugar and continue beating.
  • Slowly add the milk to the mixture, then add the remaining sugar until smooth.


Mini Pancakes Ingredients

  • Mix flours, baking soda, baking powder, salt, and sugar together.
  • In a separate bowl, whisk together eggs, buttermilk, and vegetable oil.
  • Slowly mix the dry ingredients into the wet.
  • Using a ladle or squeeze bottle pour 5cm round pancakes in a pan on a medium heat.
  • Once bubbles begin to form on the top, flip. Cook until brown. Repeat until all pancakes have been made.


To Assemble

  • In a small bowl mix the vanilla icing with a drop of yellow food coloring. Set aside
  • Fill a piping bag with the vanilla buttercream frosting and ice the top of each cupcake.
  • To that stack 5-7 mini pancakes. You can add a small amount of frosting in between pancakes to help them stay together.
  • Garnish with the yellow frosting in a small butter shape and drizzle maple syrup on top.
