Cooking Time:

Falafel Ingredients
Makes 30-40

  • 500g turkey mince
  • 1 tsp cumin ground
  • 1 tsp coriander ground
  • ½ tsp chilli flakes
  • Pinch salt
  • 1 tbsp coriander, chopped
  • 1 tbsp parsley, chopped
  • 1 tbsp dill, chopped
  • 1 onion, chopped fine
  • ½ cup cooked coarse bulgur
  • ¼ cup fine bulgur
  • Olive oil for cooking


Yoghurt Salsa Ingredients

  • Cucumber, diced
  • Tomatoes, diced
  • Coriander, chopped
  • Spring onion, chopped
  • Yoghurt
  • Salt and pepper


To Serve

  • Lettuce, chopped
  • Pita


Method

  • Combine all of the falafel ingredients. Portion the mixture into little balls or patties.
  • Shallow fry in a pan on a low heat until cooked through.
  • Combine all of the salsa ingredients.
  • Open the pita, add the lettuce, salsa, and falafels, wrap and devour.
