High Energy Fruit & Nut Bar

Need a boost, try these high energy fruit & nut bars from Dean Brettschneider. As made on "Kiwi Baker in Shanghai".
20g mixed peel
20g dried figs – stem removed and cut into 6 pieces
150g raisins
150g dried apricots – cut into 6 pieces
150g toasted almonds – skin removed, lightly toasted and chopped roughly
150g jumbo oats (not crushed oats)
75g pumpkin seeds
75g sunflower seeds
50g sesame seeds
1 teaspoon cinnamon powder
115g plain flour
115g sugar
100g liquid honey
45g butter
75g honey to glaze
Mix the nuts, dried fruits, seeds, flour and spices together in a large bowl and set aside
Place the sugar, honey and butter into a saucepan and over a medium to high heat bring to the boil until it reaches 115°C on a sugar thermometer.
Remove from the heat and pour into the mixed fruits and nuts mixture, combine well until evenly incorporated.
Place the firm mixture into a tin which has the sides and bottom lined with non stick baking paper (approximately 20cm wide x 30cm long x 3cm high), press firmly until evenly spread out.
Place into a preheated oven set at 180°C and bake for 25 – 30 minutes until the mixture as begun to set.
Remove from the oven and cool in the tin. When the slice is completely cold, cut into desired little bars.
Makes 15 little bars
