Deluxe Fruit & Nut Granola

A healthy choice from Dean Brettschneider from the show "Kiwi Baker in Shanghai".
500g jumbo rolled oats
75g whole almonds – roughly chopped
75g cashew nuts – roughly chopped
75g pecans – roughly chopped
50g thread coconut
100g pumpkin seeds
100g sunflower seeds
50g sesame seeds
50g brown sugar
½ teaspoon ginger ground
½ teaspoon cinnamon ground
Pinch of salt
Mix together in a large mixing bowl and set aside
150g dried apricot – chopped
150g figs – chopped
150g dried cranberries
100g Chinese wolf berries (soaked in hot water for 10 minutes, then drained)
Combine together and place into a bowl and set aside
100g Soya bean oil
100g honey
Zest of 1 oranges
Juice of l orange (approx 100mls)
In a saucepan melt the oil and honey over a low heat, add the orange zest and combine, pour over the dry ingredients and mix well.
Spread onto a 2 large or 3 small baking trays and place into a preheated oven set at 180°C and bake for 10 minutes and then using a wooden spoon stir the mixture together so that it bakes evenly, especially bring in the outside ingredients into the centre, bake for another 10 minutes and stir again. Add the dried fruits and bake for another 10 minutes.
The colour should be a nice and amber colour.
Cool until absolutely cold and then store in an air tight container
Makes approximately 1.3kg before baking
